The ingredients in this salad are fab fertility-friendly foods:
Tomatoes are a good source of vitamin C, a potent antioxidant that has a variety of roles in the body, including immunological support, skin health, blood clot prevention, and prostate cancer protection. Tomatoes, on the other front, contain Lycopene, which, combined with vitamin C, helps to protect the egg and sperm from oxidative stress produced by free radical damage. Lycopene is a carotenoid that occurs naturally. For many people, the tomato is the primary source of lycopene. Carotenoids are potent antioxidants that give fruits and vegetables their red, yellow, and orange hues. They play a crucial function in protecting the body’s cells from the harm caused by free radicals.
Cucumber- low in calories, is great for hydration, reducing inflammation, and are a good source of vitamin C, K magnesium, and fiber. They contain an antioxidant called quercetin which helps reduce swelling.
Coriander – contains large amounts of antioxidants which are linked to helping reduce inflammation, reducing cholesterol, in the reduction of anaemia and indigestion. Did you know? Coriander has been linked to helping move mercury and other metals out of body tissue to be excreted from the body?
Tomato, Cucumber and Coriander Summer Salad (serves 6)
1 large cucumber cut into 1cm cubes
7 large ripe tomatoes cut into 1 cm cubes
½ tsp sea salt flakes
A large handful of coriander leaves chopped
Juice of one lime
Place all the ingredients into a bowl and squeeze over the lime juice. Mix together and serve.
