Summer in a glass … fertility friendly elderflower, strawberry and cucumber cooler

The ingredients in this cooler are super great for health and fertility:

Cucumber – low in calories, great for hydration, reducing inflammation, and are a good source of vitamin C, K magnesium, and fibre. They contain an antioxidant called quercetin which helps reduce swelling.

Strawberries – are rich in vitamin C, a powerful antioxidant, important for supporting the immune system, in skin health, blood vessel strengthening, heart health, and for fertility. One portion a day contains the entire recommended daily amount of vitamin C for an adult along with being a good source of fibre, potassium and folate.

Mint – a good source of iron, folate, and beta carotene- adding to the balance and taste of this lovely cooler.

How to make your Fertility Friendly Elderflower, Strawberry and Cucumber Cooler

Ingredients (serves 6-8)

A handful of mint leaves

8 strawberries, washed and halved

1 cucumber

100ml elderflower cordial

1-litre sparkling water

Ice cubes

Method

Place a handful of washed mint leaves along with the strawberries into a large jug along with the cucumber slices and elderflower cordial and stir to mix.

Add ice cubes to the jug and top up with the sparkling water. Enjoy!
