Nutritious and Delicious Celery, Apple and Walnut Salad

Celery contains a plant compound called Apigenin, which has been found to possess anti-inflammatory, antibacterial, antiviral properties…great for supporting the immune system this winter. It is fantastic for hydration, supporting the digestive system, low in calories, helps to lower blood pressure, good for the skin, hair and bones and is a great source of vitamin c, potassium and calcium.

Apples help support the immune system too as they are also rich in vitamin c, antioxidants and contain many plant compounds including Quercetin (a great anti -inflammatory).

Walnuts  are the only nut to contain omega 3 (apart from butternut)– linked in studies to improving sperm, motility, shape and quality. A great source of vitamin E – important for endometrial health. Also rich in magnesium the ‘happy mineral’ linked to improving sleep and reducing stress and anxiety. Magnesium also helps in producing progesterone and increasing blood supply to the uterus, which are both important for fertility.

Celery, Apple and Walnut Salad

Makes 4 servings

2 apples of your choice chopped into small cubes

1/2 lemon (juiced)

2 celery stalks (finely sliced)

2 tbsp chopped walnuts

1tbsp natural yoghurt

1 clove garlic (crushed)

2 tbsp Extra virgin olive oil

Salt and freshly ground black pepper, to taste

Combine the apples with the lemon juice in a bowl. Add the celery and walnuts then toss. Combine the yoghurt, olive oil and garlic in another bowl, then fold into the apple and celery mixture. Season to taste with salt and pepper. Enjoy!
