Homemade baked beans – a great fertility friendly snack, brunch or lunch

Who loves baked beans? Why not make your own? They are a great addition to your fertility diet as they contain some great nutrients in them, including protein (great for balancing out sugar levels), folic acid, fibre and iron and are classed as one of your 7 a day. If you fancy having them as a snack, why not enjoy in a small bowl with grated cheese on top or with a small piece of sourdough?

Homemade baked beans

400g haricot beans (drained)

3 large ripe tomatoes – chopped

1 onion finely chopped

1 tsp extra virgin olive oil

1/4 pint of water

1 tablespoon of finely chopped fresh basil.

To make:

Heat the extra virgin olive oil gently in a saucepan, add the onion and cook gently until translucent. Add the water and chopped tomatoes, bring to the boil and cook for 5 minutes. Give the mixture a stir, remove from the heat and stir in the chopped basil. Add in the haricot beans and place back on the hob over a low heat. Continue to cook for another 8-10 minutes until the beans are soft… season with a bit of black pepper, chilli or maybe some cheese? Enjoy!  This recipe is great for breakfast on toast, a snack, brunch or in the side… so versatile.
