High in Vitamin E King Prawn, Spinach and Green Pepper Stir fry

This ‘nutritious and tasty’ stir fry is rich in vitamin E, which helps protect your cells from damage and promotes a healthy immune system.

Prawns are a great source of protein and are low in fat, making them an excellent health and fertility food. They are high in omega 3 fatty acids, iodine, selenium, zinc, vitamin D, and A, as well as significant amounts of vitamin B12, B6, and niacin. They’re also rich in iron, which aids in the production of red blood cells.

Did you know… Prawns contain nearly 22 times the vitamin E found in beef, and 19 times that of chicken!

Spinach -is super!- providing a good amount of vitamin E, along with folate, vitamin C, vitamin A and iron.

Green pepper – are high in vitamins C, A, and E, as well as folate and potassium, all of which are beneficial to health and fertility. In this recipe, green peppers go well with the chilli.

Ingredients (serves 2)

200g King Prawns (raw and peeled)

1 Green Pepper

100g Baby Spinach Leaves

½ deseeded chilli – finely chopped

2 cloves garlic – finely chopped

2 tbsp of olive oil

3 tbsp of soy sauce

Juice of 1 lemon

Seasoning (to taste)

Method

Heat the olive oil in a wok, add the pepper along with the chilli, and garlic and fry gently for a couple of  minutes until the pepper has softened a little. Add the prawns, spinach, soy sauce, lemon juice, salt and seasoning (optional) and cook until the prawns all turn pink. Serve and enjoy with fine noodles or organic brown rice – great for a quick lunch or dinner!
