Citrus scallops – a vitamin sea fertility friendly dish

Enjoy scallops? They are a fantastic food that is helpful to fertility, so that is good news! Scallops are low in fat and high in protein. They also include a number of nutrients that are excellent for fertility, including vitamin B12, selenium, zinc, and vitamin B12. They are also a rich source of omega-3 fatty acids.

The citrus dressing contains lemon and lime which are abundant in vitamin C and flavonoids, both powerful antioxidants, important in preventing free radical damage to cells- including sperm and egg cells, supporting the immune system, for skin health, increasing iron absorption from food, weight loss and the prevention of scurvy.

Extra -virgin olive oil, is abundant in antioxidant polyphenols, vitamin E and healthy monounsaturated fat. Great for the heart, reducing inflammation, skin care and fertility.

Citrus Scallops

Ingredients (makes 2 portions)

6 scallops

1 tbsp extra virgin oil

½ tbsp butter

1tbsp fresh chives (chopped)

Dressing

juice 1/2 lime

juice 1/2 lemon

1/2tbsp soy sauce

Pinch of ground black pepper (optional)

To make

Combine together the dressing ingredients and set to one side. Heat the olive oil and butter in a non stick frying pan. When hot add the scallops, season (optional) and cook for 2 minutes per side. Remove from the pan and slice in half horizontally. Arrange on 2 plates, drizzle some of the buttery pan juices on top, season with black pepper (optional), spoon over the dressing and scatter over the chives. Enjoy with a summery citrus salad!
