Banana, Kiwi and Blueberry Nut butter Toast

Do you need a quick breakfast, brunch, or snack suggestion that also helps you get more fruit into your diet? Why not try this lovely fruity toast?

Simply toast a piece of seeded bread or sourdough and smear over with nut butter of your choice. Top with banana and kiwi slices and a handful of blueberries. Enjoy!

This delicious fruity provides a great nutrient balance. The toast supplies some carbohydrates with lots of goodness from the seeds (if its sourdough this is great for gut health), the nut butter provides a mix of nutrients including protein, fibre, B vitamins, zinc, phosphorus and vitamin E.

The banana is a fab source of magnesium – the happy mineral (helping to reduce stress) and provides numerous other important nutrients too including potassium and vitamin B6.

Kiwi Fruit contains one of the highest vitamin C content of any fruit.  Kiwi fruit may be small but they are packed full of goodness!…. from vitamin C and E to folate, kiwifruit has it all — and then some! They also contain a good amount of fibre too.

Blueberries are a rich source of many vital nutrients including folate, vitamin k, potassium and fibre. They are also a very good source of the powerful antioxidant vitamin C. This helps to support the immune system, regulate hormones and reduce oxidative stress caused by free radicals to help protect the DNA in sperm and egg cell. It may also help protect against ageing.

If you don’t like banana or are avoiding it – swap for avocado as this is another great source of many nutrients including healthy monounsaturated fat, magnesium and is also low in carbohydrates.
