Baked Apple with Walnuts, Honey and Cinnamon

Apples (or fresh apple juice) help support the immune system too as they are also rich in vitamin c, antioxidants and contain many plant compounds including Quercetin (a great anti -inflammatory). They are low in calories and also a low Glycemic Load (GL) fruit meaning they won’t spike blood sugar levels – this is important in helping to keep hormones balanced.

Walnuts are the only nut to contain omega 3 (apart from butternut)– linked in studies to improving sperm, motility, shape and quality. A great source of vitamin E – important for endometrial health. Also rich in magnesium the ‘happy mineral’ linked to improving sleep and reducing stress and anxiety. Magnesium also helps in producing progesterone and increasing blood supply to the uterus, which are both important for fertility.

Ingredients: (makes 2 portions)

2 Apples

1tsp cinnamon

2oz chopped walnuts

Local runny honey

Natural yoghurt (optional)

Place the apples on the worktop and push an apple corer into the centre of each one. Spoon out the middle of the apples and put into a bowl- add in a nice drizzle of local honey with the chopped walnuts and a pinch of cinnamon…put the mixture back inside the apples and place into a preheated oven at 180 degrees C for around 20 mins until soft. Enjoy! Lovely with natural yoghurt.
