Asparagus and cream cheese dip

Did you know that roughly 130g of asparagus provides half of your daily folate requirements and all of your vitamin K daily requirement? So stock up on the asparagus!

Why not try making this lovely dip.

Ingredients:

1lb asparagus

8oz cream cheese, softened

2 cloves garlic, crushed

2 tablespoons red onion finely chopped

2oz Parmesan cheese, grated

How to make:

Put some asparagus in a pot of boiling water, reduce the heat to low, and cook for 3-4 minutes.

Drain them and immerse them in cold water.

Combine the Parmesan cheese, garlic clove, red onion, and softened cream cheese in a blender and blend until smooth. Pulse a few times to incorporate the asparagus. Bake at 180 degrees c for 10 minutes, or until the mixture is hot and bubbly and the top is slightly browned.

Enjoy your dip hot or cold with crudites.
