Nutritious salmon treat full of omega 3 goodness to kick off the New Year!

Why not try making this nutritious salmon treat to kick off the New Year and give your health and fertility an omega 3 boost at the same time!

Ingredients

1 medium free-range egg

250g Brown rice

3 tbsp soured cream

1 tsp finely grated fresh ginger

1tsp olive oil

Finely grated zest and juice ½ lime

75g smoked salmon, sliced

5cm cucumber, sliced

½ small bunch fresh coriander, roughly chopped

2 spring onions, thinly sliced, or a handful of watercress leaves

How to make

Bring a small pan of water to the boil. Lower in the egg and cook for 5 minutes. Drain and rinse under cold running water, then peel and cut in half. Cook the rice according to the pack instructions.

In a small bowl, mix the soured cream, ginger, olive oil and the lime zest and juice to make a dressing. Season to taste.

Transfer the rice to a serving bowl and top with the smoked salmon, cucumber, coriander and spring onions or watercress. Drizzle over the dressing to serve.

You can change from vegetables to salad ingredients to suit. Enjoy!
