Why not try this amazing fertility friendly salad from nutritionist Sue Bedford

Why not give this salad a try and boost fertility at the same time.

Not only is it delicious but is also packed full of vital vitamins and minerals which are key players in fertility. Try to use organic ingredients wherever possible.

Halloumi, avocado and pomegranate salad with orange slices on a bed of Watercress sprinkled with pine nuts or pumpkin seeds

Makes 4 servings

½ red onion, sliced

250g halloumi cheese, sliced

100g watercress, washed and drained (could be substituted with rocket or spinach)

Seeds from ½ pomegranate

2 avocados – sliced

1 orange peeled and sectioned

large handful of mint

Handful of pine nuts or pumpkin seeds sprinkled over


3 tbsp olive oil

1 tbsp lemon juice

½ tsp honey

Salt and black pepper


Heat a griddle pan on a medium to high heat. Add the slices of halloumi cheese and grill them for a couple of minutes on each side until slightly softened.

Arrange the watercress /rocket/spinach on a plate. Finely chop the red onions and sprinkle those over too, then add the slices of halloumi. Add the sliced avocado and orange segments and sprinkle the pine nuts or pumpkin seeds over the top.

Whisk all the dressing ingredients together and season with salt and pepper. Drizzle the dressing over the salad, then sprinkle with the pomegranate seeds and mint.
